Basic Ice Cream Recipe

I use a Cuisinart Pure Indulgence 2 Quart Frozen Yogurt-Sorbet & Ice Cream Maker to freeze and churn all the delicious ice cream written about on this blog.

It's a simple and easy to use appliance.  There's only one dial and two settings: off and on!  It doesn't get easier than that, seriously.  Plus, it can make an ice cream in under 30 minutes

Here is a simple ice cream base recipe - just add flavor!

This produces approximately 2 quarts of ice cream:

1 cup whole milk
1 cup sugar
1 teaspoon corn syrup
1/8th teaspoon corn starch
1 large pinch of salt

Combine the above ingredients in a saucepan and heat to a slow simmer, stir constantly, and whip with an immersion blender (using the whip attachment) until thick and foamy.  Be careful not to let the mixture burn or overflow!

Add flavor (vanilla extract, peppermint extract, cranberry sauce, whatever you want!) and combine the mixture in a bowl with 3 cups heavy cream then blend it with the whip attachment of the immersion blender. 

Put the bowl in an ice bath, refrigerate, and pre-chill in the freezer for an hour before putting into the ice cream maker.

Mix-in any tasty treats you want 5 minutes before the ice cream is done! 

This recipe is egg yolk free, which makes it an American (or Philadelphia or New York) Ice Cream.
